Crunchy Homemade Coleslaw in Ten Minutes
Nestware Kitchen
Shop-bought coleslaw is mostly mayonnaise with some cabbage in it for appearances. Homemade is the other way round, and it's a different thing entirely: crunchy, fresh and tangy.
It's also a ten-minute job. Shred, toss, done. We run the carrot through the coarse drum on the rotary grater and slice the cabbage on the slicing drum, which gives fine, even ribbons without any knife work at all.
Crunchy Homemade Coleslaw in Ten Minutes
Serves: 6 servingsPrep: 10 min
Ingredients
For the slaw
- ¼ white cabbage (about 300g), finely shredded
- ¼ red cabbage (about 200g), finely shredded
- 2 carrots, coarsely grated
- 4 spring onions, finely sliced
- A small handful of parsley, chopped
For the dressing
- 3 tbsp mayonnaise
- 3 tbsp natural yoghurt
- 1 tbsp cider vinegar or lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt and black pepper
Method
- Shred the cabbages and grate the carrots into a large bowl. If the cabbage is very damp after washing, give it a spin in a salad spinner first: wet cabbage means watery slaw.
- Add the spring onions and parsley.
- Whisk the dressing ingredients together and season well.
- Pour over the veg and toss thoroughly. Taste, and add a splash more vinegar if it needs brightening.
- Serve straight away for maximum crunch, or chill for up to an hour.
How to stop coleslaw going watery
Cabbage releases water once it's salted and dressed. Two fixes: dry everything well before dressing (a salad spinner is ideal), and dress it as close to serving as you can. If you're making it well ahead, keep the dressing separate and toss just before eating.
Easy twists
- Apple and fennel: swap one carrot for a julienned apple and some thinly sliced fennel.
- Asian-style: lose the mayo; dress with lime, sesame oil, soy and a little honey, and top with peanuts.
- Christmas: shredded Brussels sprouts, apple and toasted pecans. Seriously good with cold turkey.
How long does homemade coleslaw last?
Two to three days in a sealed container in the fridge. It softens as it sits, so it's crunchiest on day one.
