The Christmas Grating Guide: Which Drum for What

Nestware Kitchen

Christmas is the busiest week of the year for a grater. Cheese for the gratin, chocolate for the pud, nuts for the stuffing, carrots and sprouts for the slaw. Here's what each drum on the Nestware rotary grater is best at, so you can stop guessing and get on with the mulled wine.

The five drums

  • Fine: Parmesan, hard cheeses, chocolate, whole nutmeg and nuts (great for a quick nut "flour" for stuffing). Use it for Parmesan crisps and the top of the gratin.
  • Coarse: cheddar, Gruyère, carrots, courgettes and apples. Your go-to for macaroni cheese and coleslaw.
  • Slicing: potatoes for dauphinoise, cucumber, onions, mushrooms and Brussels sprouts.
  • Waffle: crinkle-cut potato and veg slices for crisps and posh gratins. Fun for kids to help with.
  • Julienne: matchsticks of carrot, apple, celeriac and beetroot for remoulades and festive salads.

Tips for faster, cleaner grating

  • Chill soft cheese first. 20 minutes in the freezer stops mozzarella, Gruyère or young cheddar smearing.
  • Cut food to fit the hopper and let the pusher do the work. No pressing hard needed; let the drum turn.
  • Press the suction base down firmly on a clean, smooth, dry worktop. It won't hold on wood grain or tiles with grout lines.
  • Rinse straight away. Cheese is much easier to clean before it dries. The hopper and drums are dishwasher safe.

Here's the festive side dish we make on repeat from November to January.

Brussels Sprout, Apple and Pecan Slaw

Serves: 6 servingsPrep: 15 minCook: 5 min

Ingredients

  • 300g Brussels sprouts, trimmed
  • 1 crisp apple (Braeburn or Pink Lady)
  • 1 small carrot
  • 50g pecans, toasted and roughly chopped
  • 40g dried cranberries
  • 30g Parmesan or Pecorino, finely grated

For the dressing

  • 3 tbsp olive oil
  • 1 tbsp cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup
  • Salt and pepper

Method

  1. Slice the sprouts on the slicing drum (or very thinly by hand) into a large bowl.
  2. Julienne the apple and carrot, and add to the sprouts.
  3. Whisk the dressing ingredients together and toss through the veg.
  4. Leave for 10 minutes to soften slightly, then scatter with the toasted pecans, cranberries and freshly grated cheese.

Can you grate chocolate in a rotary grater?

Yes, use the fine drum with a well-chilled bar. It's perfect for dusting over trifles, hot chocolate and Christmas pudding. Work quickly so it doesn't melt from the warmth of your hands.

Can you grate nuts?

Yes, whole nuts like almonds and hazelnuts grate beautifully on the fine or coarse drum, which is handy for stuffing, crumble toppings and decorating cakes.
