Three-Ingredient Parmesan Crisps (The Easiest Christmas Canapé)
Nestware Kitchen
Every Christmas there's a moment when people turn up early and you've got nothing out. These are the answer. Three ingredients, ten minutes, and they look like something from a restaurant.
The only rule: grate the Parmesan yourself. Ready-grated cheese contains anti-caking agents and won't melt into those lovely lacy rounds. The fine drum on the rotary grater gives fluffy shreds that melt and crisp perfectly. 100g takes about thirty seconds.
Three-Ingredient Parmesan Crisps (The Easiest Christmas Canapé)
Serves: about 16 crispsPrep: 5 minCook: 8 min
Ingredients
- 100g Parmesan (or Grana Padano), finely grated
- 1 tsp fresh thyme leaves or ½ tsp chopped rosemary
- Freshly ground black pepper
Method
- Heat the oven to 200°C (180°C fan, gas 6) and line two baking trays with baking parchment or silicone mats.
- Mix the grated Parmesan with the herbs and pepper.
- Place heaped tablespoons of the mix on the trays, about 5cm apart, and gently flatten each into a thin round about 6cm wide.
- Bake for 6 to 8 minutes, until melted, lacy and pale golden at the edges. Watch them closely in the last minute: they go from golden to bitter quickly.
- Leave on the tray for 2 minutes to firm up, then lift onto a wire rack to cool and crisp.
Ideas for serving
- As they are, with a glass of fizz.
- Topped with a dot of fig jam, a curl of prosciutto or a little smoked salmon and crème fraîche.
- Draped over a rolling pin while still warm, to make little tuile curves for soup or salad.
- Crumbled over a Caesar salad or risotto.
Can you make them ahead?
Yes, up to three days ahead. Store in an airtight container with a sheet of kitchen paper between layers. If they soften, five minutes in a low oven crisps them back up.
Other cheeses that work
Any hard, aged cheese: Grana Padano, Pecorino, aged Gouda or a mature cheddar (cheddar spreads more, so space them further apart). A mix of Parmesan and cheddar is excellent.
