Gingerbread Overnight Oats
Nestware Kitchen
The clocks are about to go back, the heating's on, and we've started thinking about gingerbread. Earlier than is socially acceptable, perhaps. We're fine with that.
This is our cosiest overnight oats yet, a festive cousin of our cinnamon overnight oats. A spoonful of black treacle gives that deep, sticky gingerbread flavour, and a pinch of salt keeps it from tasting too sweet. Make it in the Nestware oats jar and use the steel lid to measure your 50g of oats.
Gingerbread Overnight Oats
Serves: 1 jarPrep: 5 minChill: at least 4 hours or overnight
Ingredients
- 50g rolled oats
- 120ml milk
- 60g Greek yoghurt
- 1 tsp black treacle (or molasses)
- 1 tsp maple syrup
- ½ tsp ground ginger
- ¼ tsp ground cinnamon
- A pinch each of nutmeg, cloves and salt
To top
- A crumbled ginger nut biscuit
- A spoonful of yoghurt
- A few pomegranate seeds or slices of pear
Method
- Add the oats, spices and salt to the jar and stir to mix the spices through.
- In a cup, whisk the treacle and maple syrup into a splash of the milk until loosened (treacle is stubborn when cold), then pour into the jar with the rest of the milk and the yoghurt.
- Stir thoroughly, seal and refrigerate overnight.
- In the morning, top with a crumbled ginger nut, a spoonful of yoghurt and some pomegranate or pear.
A gift idea
Layer the dry ingredients (oats, spices and a little brown sugar instead of the syrups) in a jar with a ribbon and a handwritten tag: "Add 120ml milk and 60g yoghurt, chill overnight." It's a lovely little teacher or neighbour present, and the jar gets used every morning afterwards.
Can I warm them up?
Absolutely, and gingerbread oats are particularly good warm. Tip into a bowl, add a splash of milk and microwave for about a minute.
Is black treacle the same as molasses?
Close enough for this recipe. Both give a rich, slightly bitter depth. Golden syrup works if that's all you have, but you'll lose some of the classic gingerbread flavour.
